Description

This single origin decaf is our original decaf offering we have had since the beginning.  We chose a Mexican decaf because it works well as a darker roasted decaf that maintains a robust flavor.  Perfect for those evenings when you really want some delicious coffee, but you'd also really like to sleep later too.

This coffee is a dark roast, but as with any decaffeinated coffee, the beans appear darker than the actual flavor signifies. 

 Mountain Water Process Decaffeination

The Mountain Water Process is a chemical-free, eco-friendly method for decaffeinating coffee using pure water from Mexico's Pico de Orizaba glacier, removing ~99% of caffeine while preserving flavor. Patented by Descamex in Veracruz, Mexico, this method involves soaking green coffee in water and filtering it through activated carbon to remove caffeine before reintroducing flavor compounds.

 No chemical solvents (like methylene chloride) are used; the process relies on water and charcoal filters.  The beans are also able to retain their original, natural, and nuanced flavors because the water used for soaking becomes saturated with coffee solubles (flavor compounds).

The Process Steps:
  1. Steaming/Soaking: Green coffee beans are steamed and soaked in pristine mountain water to dissolve caffeine.
  2. Filtering: The water, now containing both caffeine and flavor components, passes through activated carbon filters that trap the caffeine.
  3. Re-infusion: The caffeine-free water (now Green Coffee Extract) is used to soak a new batch of beans, allowing the caffeine to be removed without stripping the coffee's flavor.
